with clean hands, crumble
+ 500g / 4 cups self raising flour
+ 50g caster sugar
+ pinch of salt
+ 110g soft, chopped butter
into a fine breadcrumbs texture, remember to keep it light and airy! 

then make a well in the middle, pour in 300ml / half a pint of milk
use a hand mixer (or simply a butter knife) continue to mix from edge to the centre, turning the bowl as you go
as soon as it combined, stop mixing otherwise you will squash out the air

form mixture into a ball in the bowl then tip the ball of dough onto a flour-ed surface
gently shape the dough and press it to the desired thickness ( we like ours about one inch )

finally, dip your cutter into some flour and start cutting and lining your baking tray
this recipe should make 10 giant ones  
and remember to brush them with egg & milk mixture before putting the tray into a pre-heated 200c/400f oven for 12-15 minutes


sometimes we prefer baking wholemeal ones, if that's your preference, here's a list of the substitute ingredients for the mixture:
3 cups / 450g wholemeal self raising flour
1 tablespoon caster sugar
pinch of salt
80g butter
1 cup / 250ml milk
